Corn Souffle

This is a cheap, quick, and easy dinner to make when you're really busy. A box of corn mix, eggs, and cans of corn are almost all you need!


16 oz. can creamed corn
16 oz. can whole corn, drained
I package of corn muffin mix
1/2 cup vegetable oil
2 beaten eggs, or 1/2 cup egg substitute
8 oz. sour cream


Preheat oven to 30 degrees. Mix all ingredients together in a large mixing bowl. Pour into a greased round baking pan. Bake at 350 degrees for 55 minutes, until a toothpick inserted in the center comes out clean, and the top is golden.
